Ever since my mommy taught me this recipe when I was younger (like, last year) I make this curry all the time! It's quick, it's simple and most importantly, it's delicious! And it's fool proof - it's absolutely impervious to human incompetence in the kitchen. Even I cannot screw this one up! And I kiss better than I can cook. :P So, as Julia Child would say, "If I can do it, you can do it ...and here's how to do it!"
Firstly, you will need a jar of Lee Kum Kee Coconut Curry Sauce. I usually ration about 1/2 a jar with 2 cups of water to make a good sized pot of curry that serves about 3-4 persons. Or in my case, lunch for a week! So spoon 1/2 a jar of curry paste into your stew pot along with 2 cups of water and heat on medium/high heat.
I prefer dicing over slicing when it comes to onions. Smaller pieces 'dissolve' a lot quicker and I like my onions dissolved! I usually wear sunglasses while I do this part. Otherwise I'd tear up like a pair of skinny jeans on a fat ass.
Next, pan fry your potato cubes. This step is vital because the fried layer serves as an exoskeleton - it keeps the potatoes in tact while they stew later on. It also prevents your curry from turning into a huge pot of mashed potatoes.
Since you're having such a great time, you might as well fry-pan the diced onions till they turn slight golden/brown. Then dump your potatoes/onions into your pot of golden goodness!
Don't forget your tomato and carrot slices! Simmer on medium for 45 minutes. The curry will thicken over time.
DID I MENTION YOU NEED CHICKEN BREAST? Cube your breast(s) and pan fry. By the way, I don't bother washing my pan between frying different ingredients. Let's not forget, this is a piece of chicken here. It's not your baby, you don't owe it nothin! So just let it rip and fry the living beejeesus out of it! Yo mama didn't raise no foo! Besides, the residual onion pieces will add flavour to your chicken cubes. It's a WIN-WIN!
Add your chicken to the stew and you are done! All you need to do next is exercise some patience and dinner will be ready in 20!
You'll also need rice but cooking rice is not exactly picturesque so that's all I'm going to say about that. Enjoy! (:
